Each brand uses their own color code, so the color don't mean squat.

Polini in Hawaii? What shop is this? Lots of shops sell Polini springs, but I don't know of a Polini specific shop.
If they are real Polini brand springs, I'm thinking green is what you wanting. Polini doesn't assign a number rating (1k, 2k, etc) they just give a small graph showing stiffness. Softest to stiffest would be: Stock, Black, Green, Yellow, and Blue.

Greetings:
Within a given brand, you can measure the wire thickness. Stock is 1.6mm. Of course, different metal properties might make for different stiffness with the same diameter. Also paint exaggerates the wire diameter. Anyway, Pokini does make "Natural" unpainted springs that are stiffer than stock.

I got the green Pollini ones sold as 2k by the shops. Once they "break in" i feel like i should have gotten something a little bit stiffer but i still like them.
I say, stay with those black ones.. you will not notice much difference if you get the green.
