I have a few friends that work at various shops equipped with dynos and i'd like to see where my bore/pipe combo is making peak power and such.

From what i've read, locking the variator takes the trans shifting out of the equation and gives a more traditional dyno plot.

Anyone done this?

You can't lock the variator, but putting the heaviest weights possible in it will make it shift faster. Or you can manufacture something the wedges the variator in the fully extended position.

Or you use a proper small engine dyno instead of a chasis dyno. The one I had came with fixed sheaves for cranks of different diameters.
