Would an aftermarket variator help an 80cc elite? Which one?

It might be helpful to state the year and model Elite you have? 2001 Honda Elite S, 1989 Elite E, etc.
or even the engine model AF05? AF16?

Generally speaking an aftermarket variator usually does give some performance benefits (better take off, midrange, and sometime even top speed).

As far as I am aware, there is no aftermarket variator for the Elite 80. You can change the rollers though.

If you're going to change the rollers, you may want to inspect your belt and perhaps change it too if you haven't in a while... (when was the belt last changed?)

Yea good idea im not sure when the previous owner changed it. I'll change all of it this weekend. Idk if you guys use this but the underbody paint you put on cars works great on the scooters, it really protects well I have been putting it on mine, easy to spray on and works well.
