questions about polini and ct manifold/carb install

I am installing a polini contesta bbk, ct manifold, oil plug, throttle cable, 270mm shock and 21mm oko this sunday and I have a couple of questions/clarifications before I start.
Current setup
feel free to ignore this just wanted give background
49mm nikasil
9:1 gears
Keli variator
Keli clutch
v8 exhaust
stock carb (105 main) pilot is drilled out a little
My questions
Is there something I want to remove on the reads of the ct manifold? I thought I remember reading something about it a while ago but I cant find it now?
pistons rings are the same? obviously the beveled edge goes up
lock-tight the ct-mainifold? I have read about them coming loose
does the metal polini base gasket leak? should I go with a paper oem? obviously get the mating surfaces super clean
torque everything to oem specs?
does 118/45 seem like a good place to start with a 21mm oko
I dont have the spanner wrench to adjust the shock any tricks to do this?
32:1 the standard for BBK? what oil do people prefer I am running honda 2 stroke oil
What spark plug do people prefer? I am running stock BPR6HS
What temps should I be worried about ( I use a trailtech sensor is under a HEADBOLT)
Any other advise or word of wisdom?...... feel free to enlighten me.
I will wash everything down and and chamfer the ports
I will do a 3-5 heat cycles and ride it easy for the first 100-200 miles.
The goal of this is for scooter to be practical I want to be able to hit 50-55mph at wot and be able to cruise at 40-45mph and still have good acceleration

Well I can't wait to hear the answers to some of these questions myself... But about the oil. I use penzoil marine injector oil. I get it in the gallon jug from autozone. I mix mine to 31:1... put 4 ounces in a gallon container and fill to gallon mark with gas. But during break in I add an extra ounce per gallon.

never use the penzoil marine oil it will blow your engine.

+1 on never use marine 2 stroke on an air cooled engine. Marine engines have water constantly running through them.

You won't have any issue cruising and meeting those speeds with that set up. I use a light coat of copper sealant on my metal gaskets but that's just me. I would run a br8hs plug or a 9. On the ct I cut the petal stops off but it may deteriorate your reeds quicker as they will rub the sides and the case I think on one side. But it will maximize flow. I would do some port work on the ct also, a lot of casting left over and bad angles on the top half. Not much experience with the 21mm but I might try a 120 main or 122, 45 pilot sounds good maybe a bit much for a 21 but I don't know. It's better to start rich.

^^^ I cleaned up the Ct manifold on the inside with a dermal before i installed it. The 45 was a little too much, just fired it up today and put a 42 in it I couldn't keep it running with a 45 unless I had the idle speed adjusted all the way in, seems to idle alot better about 1 turn out with a 42 in it.
It seems to be running pretty good still haven't taken it for a run yet been a doing heat cycles but it idles pretty good every minute or so the rpms drop and it "shakes/stumbles" and picks back up and idles fine. I am currently running a BPR6HS any reason why I should go with the 8?

Heat on the long stretches, during the winter if you ride you can use one of them 6s. It really needs a cooler plug when you run a big bore kit, or even stock if you're wot all the time.

you dont want it to idle while doing heat cycles it needs to be just up from idle

To late to do the heat cycles right. I had my idle up and the temps got to around 170-180. Just got my first 50 miles on it. I ran a couple wot runs after the first 30 miles. It will hit 50 mph wavent done any long wot runs maybe 1/8 of a mile. goes from 40-48 fast then slowly climbs My temps seem good usually around 240-260 with the cht under a head bolt.
I started with a 118 main and dropped to a 115 and decided to just stick with the 118 for now I didn't notice a change accept it bogs sometime when I accelerate with 118 but I feel safer with it. Probably could clean it up by adjusting the needle clip up but its pita with the oko
My problems are
when I hit bumps it wants to stall on me I am assuming this is a float level issue?...... cuts out picks back up it is very annoying
On my first wot run it cut out on me and I thought oh s*** it soft seized be once I let off the throttle it picked back up. my temp was about 270ish so i am thinking fuel issue maybe float level?
Also between 3/4 and wot there is no change. I usually ride under 1/2 throttle and cruise around 40 mph.
currently running 32:1 with honda 2 cycle. after about 20 miles I checked the plug and it is dark brown.

Float issue wouldn't cause instant stumbling hitting a bump. Look for a loose carb mount or dodgy electrical connection more likely.

^^^ I know the carb is nice and tight I will check the wiring. It wont be for a couple a weeks I am back at school and I left my moped at home for now.
